Turkey & Vegetable Soup

If you do a quick Pinterest search for “weight loss soup” or “detox soup” you will find any number of soups filled with cabbage & veggies. I decided to try my hand at making my own veggie soup with lean turkey meat & it turned out pretty amazing I must say. I made a huge pot last week and ate it for lunch practically every day. My girls loved helping make this and we are looking forward to making it this summer with veggies from our garden!

Summer Turkey Veggie Detox Soup

Ingredients

1 lb of ground turkey, browned
1 small sweet onion diced
1 small zucchini diced (I used a bag of minis from Trader Joes)
1 diced sweet potato
1 small yellow squash diced
3 cups of chopped cabbage
3 cloves of minced garlic
1 box of low sodium chicken broth
4 stalks of celery sliced
3 large carrots chopped
1 large can of diced or crushed tomatoes
1 can of white beans
Season with sea salt (3 tsp), black pepper (1tsp), oregano (1/2 tsp), crushed red pepper (1/2 tsp) & a dash of paprika.

Instructions

You really can’t go wrong with making this! Just cook the turkey first & then drain any fat. After that I add in the garlic & onion and saute it a bit. Then I added in the broth, seasonings and the harder veggies. I let those cook until the carrots were almost done and continued with the softer veggies. Definitely save the zucchini and beans for closer to the end!

You could add basil if you wanted and I also think I will throw in some spinach next time, too! You can also sub the sweet potato for regular potatoes or include yellow squash as well. I bought mini zucchinis from Trader Joes and loved how crunchy they were!
