
Taco Pasta
kid-friendly & so easy
My girls made this & I hovered & filmed like a jr. cooking show stage mom. Everyone loved. Five stars.
Ingredients
• 1 lb of ground beef
• 16oz box of medium pasta shells
• 1 bag of 15 oz frozen corn
• 1/4 onion
• 1/2 block of cream cheese
• large diced yellow pepper
• can of diced tomatoes
• can of green chilies
• 3 cups chicken broth
• 1 package of taco seasoning
• shredded cheese
• sliced avocado
• multi-grain scoops
Instructions
• Brown 1 lb of ground beef + 1/4 an onion on the stove & add to crock pot.
• Add in the following & cook on high for 1-2 hours or low for 3-4. We did high while we went to practice!
– Large diced yellow pepper
– Can of diced tomatoes & green chilies (I went with the 28 oz)
– 3 cups chicken broth
– 1 package of taco seasoning (I like @sietefoods)
• Cook pasta shells (we used 16oz box of medium shells) separately & add them to the crockpot along with 1 bag of frozen corn (15 oz) & 1/2 block of cream cheese. Stir until the cream cheese is mixed in.
• Top with shredded cheese of choice + sliced avocado + multi-grain scoops if you so choose.
It’s even better the next day!
