Peach Salad

It is SO GOOD!

Apparently we’re just going to keep putting peaches on everything until peach season is over.

After sharing my peach salsa yesterday, here is another VERY easy way I’ve been using up our McLeod Farms peaches. This one barely qualifies as a recipe, which is honestly my favorite kind of summer cooking.

I’ve been making this peach salad whenever I want something different from our usual garden salad. It’s fresh, a little sweet, a little salty and takes about five minutes to throw together.

Easy Peach Salad

  • Chopped fresh peaches
  • Sliced fresh cherries
  • Crumbled feta cheese
  • Fresh basil, torn or chopped
  • Balsamic vinegar
  • Olive oil

Add the peaches and cherries to a bowl, sprinkle on the feta and fresh basil, then drizzle with balsamic vinegar and olive oil. Give everything a gentle toss and that’s it.

Just measure with your heart on this one! More feta? Great. Extra peaches? Obviously. I usually just use whatever I have on hand and make enough for however many people I’m feeding. I also like a little bit more balsamic and a little less oil than people typically use in recipes.

It’s so good on its own for a salad or a snack or as a side with grilled chicken or fish. And between this and the peach salsa, we are making a pretty decent dent in my annual peach haul.
