Nap Time Soup with Crock-Pot

Today I’m sharing a pressure cooker recipe you can make during your kid’s nap time. Or if you don’t have kids, while you nap. The only catch is that it will have to be a power-nap because my new Crock-Pot  Express Crock Multi Cooker cranked out a perfect chicken enchilada soup in 35 minutes flat. Amazing right  This thing is so good my family might actually think I’ve learned to cook.

If you are a longtime reader of my blog you know that I love to eat and hate to cook. Let me rephrase. It’s not exactly that I hate to cook I just hate all of the work that goes into cooking. 5 bowls here, 4 pans there and before you know it your kitchen is a wreck and all you have made is a turkey sandwich. The only thing that I don’t mind making is something in the crockpot because it is not only easy cooking but easy cleaning. And now for a live (blog) demonstration. Here are the steps for making Skinny Taste’s Crock Pot Chicken Enchilada Soup in my new Crock-Pot Express Crock Multi Cooker. For all of the ingredients see the full recipe here.

Step 1: Saut  onions in the Crock-Pot  Express Crock Multi Cooker until soft, 3-4 minutes. Slowly add the chicken broth, tomato sauce and chipotle adobo sauce (I used green chiles).

Step 2: Add the drained black beans, diced tomatoes, corn, cumin, oregano and stir. Add the chicken breasts; cover and cook on high pressure for 20 minutes then quick release.

Step 3: Remove chicken and shred with two forks. Add chicken back into the soup, adjust salt and cumin to taste. Serve in bowls and top with cheese, avocado and sour cream.
