(I’m open to naming suggestions… new at this)
At this point in my one pot culinary adventures I am just throwing random flavors of @boursincheese into the pot. No regrets.

Instructions
• Brown chicken thighs on each side with butter or olive oil + a little bit of garlic & salt.
• Add in @boursincheese cracked black pepper.
• Add the juice of half of a lemon (I think I could have used a whole lemon to make it even zestier).
• Pour in orzo (around 3 cups – I didn’t measure 🫠).
• Add 1/2 box of chicken broth or 2 cups water + a chicken bouillon cube. I prefer chicken broth but didn’t have any on hand & the water + cube did the trick.
• Bring everything to a boil, reduce & cook on low for around 10 min until the orzo has cooked & the water is mostly evaporated. Stir frequently & if it dries out add more water a little at a time until the orzo is cooked.
• Reduce to a simmer & stir in spinach & Parmesan cheese.
• Add salt & pepper to taste. I think some cracked red pepper would be delicious as well!!
