If you’re looking for an easy weeknight meal your family with demolish, this is it!

Ingredients //
- Ground Beef
- 1/4 of an onion
- 1 can of Black Beans
- 1 can of rotel tomatoes with chilies
- 1 pack of frozen butternut squash
- 2-3 cloves of minced garlic
- dash of salt, cumin & chili powder
- enchilada sauce
- tortilla shells
- shredded cheese of choice
Instructions //
- Brown and drain meat
- add all other ingredients to cooked meat – cook for 30 minutes or until squash is soft
- line a 9×13 inch dish with enchilada sauce
- roll tortillas with meat mixture and place in pan seam down
- top enchiladas with more sauce and cheese
- cover with foil and cook in oven at 375º until cheese is melted ~10-15 minutes.
