Baked Smashburger Rollups

For when the kids want smashburgers but you want a one-dish meal

We love a rollup situation for lunch around here, and I am forever looking for ways to use ground beef that aren’t tacos or spaghetti.

The kids wanted smashburgers. I wanted something I could throw in the oven and walk away from. And thus… baked smashburger rollups were born.

Baked Smashburger Rollups

I wish I would’ve had the larger burrito-size tortillas because I think they would’ve been even better, but other than that, no notes. Crispy on top, cheesy in the middle and the smashburger sauce really makes them.

Ingredients

Scale

For the rollups:

  • 2 lbs lean ground beef

  • 1/2 sweet onion, finely diced (about 1/2 cup)

  • 2 cloves garlic, minced

  • 1/2 sweet bell pepper, finely diced

  • 1 small hot pepper, finely diced, optional

  • 1 tsp kosher salt

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1/2 tsp black pepper

  • a couple of dashes of Worcestershire sauce

  • 1 cup shredded mozzarella cheese

  • 6–8 flour tortillas, preferably burrito-size

  • Olive oil spray

For the smashburger sauce:

  • 1/2 cup full-fat mayonnaise

  • 1 tbsp Dijon mustard

  • 1 tbsp ketchup

  • 1 tsp kosher dill pickle juice

  • 1/8 tsp cayenne pepper

  • Salt + black pepper, to taste

Instructions

Preheat oven to 400°F.

Brown the ground beef in a large skillet, breaking it up as it cooks. Add the onion, garlic, bell pepper and hot pepper, if using.

Season with salt, garlic powder, onion powder, paprika and black pepper. Cook until the beef is browned and the vegetables have softened. Drain any excess grease if needed.

Remove from heat and stir in the mozzarella.

Lightly spray the bottom of a baking dish with olive oil spray. Fill the tortillas with the beef mixture, roll them tightly and place seam-side down in the dish. Spray the tops with a little more olive oil.

Cover with foil and bake for 20 minutes. Remove the foil and bake another 5 minutes, then broil for 2–3 minutes to get the tops nice and crispy.

While they’re baking, mix together the mayo, Dijon, ketchup, pickle juice and cayenne. Season with salt and pepper to taste.

Serve the rollups hot with plenty of smashburger sauce for dipping.
