Pumpkin Pancakes with Sourdough Discard

Whenever you are about to feed your sourdough starter you have to get rid of some of it… aka discard it (buy my dehydrated sourdough here). If you didn’t do this then your starter would just keep growing and growing and growing. Instead of discarding half of the starter mix into the trash… make something with it! Our go-to is pancakes. I will typically make a batch on Saturday mornings as I feed my starter for Sunday bread. These chocolate chip pumpkin ones have been a favorite this fall.

** This recipe makes a lot of pancakes. I wrap them & freeze them & the girls will pop them in the microwave for an easy breakfast or healthy treat. You could half the recipe but then you would be wasting 1/2 a can of pumpkin purée and who could do a thing like that?!?**

Ingredients

1 can pumpkin purée
2 cups sourdough discard (buy my dehydrated sourdough here)
1/4 cup maple syrup
2 cups whole milk
3 tsp salt (I use Redmonds or French Grey Salt)
2 tsp baking soda
4 eggs
2 tsp cinnamon
1 tsp nutmeg
3 cups all-purpose unbleached flour
1-2 cups mini chocolate chips
