Sundried Tomato Chicken Orzo

One of our favorite one-pot dinners

Instructions

• Brown chicken thighs or tenderloins with olive oil, salt, pepper & garlic.

• Add a thing of @boursincheese garlic & herb gournay cheese & over with a 1lb box of orzo.

• Pour in a box of chicken stock & add sun-dried tomatoes. I don’t rinse them off but I don’t add the oil or else it will get really oily.

• You can add in a 1/2 cup of heavy cream if you want it even creamier and it’s also delicious with mushrooms and chopped kale or spinach. If I add mushrooms I cook them on the side & then mix them in & I always add any greens about 5 minutes before we eat.

• I try to cook the chicken evenly on all sides and then cook everything based on the orzo instructions or until it’s all cooked through!

• Top with some grated Parmesan & enjoy!!
